Plum Vinegar

Bottled up a batch of Plum vinegar - recipe courtesy of the Noma Guide to Fermentation. Start to finish, with the help of an aerator, it took less than a month. The flavor is fruity, deep, and complicated but it’s the color that really gets me. Looking forward to some new dressings and marinades this fall.
